I know we’re nearing the end of the summer, but the weather has still been fairly hot here in Nebraska. So before it starts cooling off, I thought I would share with you 3 of my favorite (and very simple!) healthy treats during the summer. All three take less than 5 minutes each to prepare (plus some time in the freezer) and are really refreshing in the summer heat! Enjoy!
Frozen Grapes
Have you tried this one before?
I can’t even call this one a recipe because it’s so simple, but here’s what I do:
- Spread some grapes out on a shallow baking pan.
- Stick the pan in the freezer for about 15-30 minutes. (This prevents the grapes from sticking together.)
- Put the grapes in a pyrex container and leave them in the freezer until you’re ready to snack on them.
They become almost slushy after being in the freezer, which makes them a perfect summer treat!
Banana Ice Cream
For those of you who haven’t yet tried banana ice cream, you need to! I promise you that it really does have the consistency of ice cream.
Here’s what you do:
- Slice up a banana and place it in a freezer safe container or a ziploc bag.
- Place it in the freezer until frozen.
- Blend the banana slices in a blender or food processor until they become the consistency of ice cream.
Voila! That’s all there is to it. You can add toppings such as nuts, toasted coconut flakes, or berries. Better yet, get creative and come up with some of your own toppings and let me know in the comments what you added!
Berries and Coconut Whipped Cream
Ok, I’ll admit that I used to love Cool Whip. But, have you ever looked at the ingredients on the back of the Cool Whip container? It’s definitely a laundry list of ingredients that I don’t want to put in my body anymore. So, when I discovered this amazing substitute, I was thrilled!
- Take a can of coconut cream (or full fat coconut milk works as well), and place it in the refrigerator over night.
- Flip the can over and open it from the bottom. All of the coconut water will now be on the top. Pour out the water. (You might want to save it to add to a smoothie.)
- Take the thick cream that’s at the bottom of the can and mix it with a hand mixer or food processor. Continue mixing until it has a thick, creamy consistency.
- Add in about 1 teaspoon of honey and 1/2 teaspoon of vanilla extract (or more to taste), and stir it in.
- Serve on top of your favorite berries, or maybe even your banana ice cream!
