One of my favorite holiday treats used to be pumpkin flavored lattes from a local coffee shop. Unfortunately, as I became more aware of the artificial ingredients in the coffee syrups as well as becoming aware of the fact that my body doesn’t love dairy products, I decided it was in my best interest to forego this holiday indulgence.
Fortunately, though, I saw other people online who were trying to recreate healthier versions of their favorite coffee shop drinks. I figured that it would definitely be worth taking a shot at this experiment myself…and I’m glad I did!
Here is my dairy free and sugar free (if you’d like) version of a Pumpkin Spice Latte. I’m hoping you like the result as much as I do this holiday season!

Ingredients
- 1 can of coconut milk
- 1/4 cup of canned pumpkin
- 1 teaspoon pumpkin pie spice
- 1 tablespoon vanilla extract
- Honey to taste (optional)
- Fresh brewed coffee or espresso
Instructions
- In a small saucepan, combine the coconut milk, pumpkin, pumpkin pie spice, and vanilla over low heat. Whisk ingredients together until well mixed and heat until the mixture is hot.
- Brew coffee as normal.
- Fill about 1/4 of a mug with the brewed coffee and then fill it up the rest of the way with the coconut milk mixture. Stir it together.
- If desired, you can add some honey, but you may find you don't need to sweeten it up at all.
